Process Description
Coffee cherries are hand-picked, fermented for 64 hours along with Kombucha, monitoring PH to remain > 4. Dried in the sun 7-10 days until humidity is 20%, then slowly dried in the shade until 12%, dehulled and manually inspected.

A household name in the Thai specialty coffee scene, Yos has
a track record of producing amazing coffee, as well as
experimenting with processing methods. This has brought him
recognition both locally an internationally, culminating in a 4th
place in Cup of Excelence, Thailand.
